so i've gotten really into fermenting right now and just jarred up a 2nd batch of ghost peppers. i think I'll let em go for about a month or so. despite being gloved and masked and eye protected, my fucking arms are on fire right now. i'm going to do a ultra limited batch of something like 24-32 bottles. super stoked on that. the name of the sauce is DEADLY DRIP HOT SAUCE. more info tbd. nice, I've got into fermenting during quarantine as well. Just did a fresno/habanero batch but it was only a two week ferment. Sauce turned out good enough that it's all gone already but there's for sure room for improvement. gonna do just Habs next, might throw some carrot in there too.

Girlfriend surprised me with some of the Hot Ones/Hetonist hot sauces for my birthday. Totally unexpected gift and I’m loving them. There’s two Mexican inspired ones (a roja and a verde) plus an insanely hot one. All are delicious.

ive been putting that old bay hot sauce on everything from beer to fries idk how many of yall mess with tajin but i found this in stores and its elevated my cucumber/fruit with lime to new levels

immediately caved and took a pretty big bite out of a ghost pep. pretty freaking hot lol, made my face sweat.
i don't fuck with superhot sauces much so my tolerance probably isn't high enough to mess with the raw reapers.
gonna figure out recipes over the next couple days and probably ferment all these guys and make sauce out of them.

El Yucateco green and red forever. What? Yucateco red sucks. Green, XXXtra Hot, and Black are the true staples. Chipotle is good but imo a condiment and not a hot sauce, not spicy at all. It took me forever to get through a bottle of the caribbean so file that under extremely mediocre.

My ghost pepper ferment is going great and based on online recipes a full pound of these guys are gonna go a long way, looking forward to trying a few different things. If anyone else on here has experience with superhot chilis hit me up, I've really only made sauces with fresnos and habs so far.
At one point I was trying to get a few peppers back under the fermentation weights and decided to eat like a quarter pepper chunk that floated to the top. It was very, very spicy and had me sweating but honestly what got me is it really jacked up my gut to the point I had to lay down lmao. The peppers themselves hit different than the sauce, folks.

Im not huge on verdes, but the Small Axe Queens 7 Umami sauce i bought recently was very green tasting and fresh and nice

Recommendations for a green sauce? I the tried the Secret Aardvark and it's just not cutting it for me aardvark sauces taste good but if you're looking for heat they don't cut it for me either.
are you looking for like a verde flavor with a lot of heat? I'd basically look for anything with reapers/ghosts/etc and tomatillos.
i've heard good things about this: haven't tried it yet myself though, so maybe it sucks who knows. not me!

Awesome, thanks dudes. I'm def looking for a bit more heat than the aardvark, but it's not absolutely necessary if the flavor is there. I love the aardvark red, but something about the green just didn't hit. I'll probably pick up all three of these and give em a go

I'd be curious about how you're going about this. I've always thought of doing something like this since the hot suace game is suppper whack here in Germany. How long did it take you to perfect your recipe / how confident are you that you can get a somewhat consistent batch multiple times? Did I miss somewhere in this thread where you talked about all this?

i'm just going for it man. i've never really done this before, but following some recipes i've found. you do have to take some precautions and definitely sterilize everything before making it. luckily, as it is lacto-fermented, i have had no issues whatsoever with mold. i fermented the peppers for just over a month, and basically i've used a food processor and the leftover brine mixed with pureed peppers. i bottled 11 bottles today, and will be wax sealing and labelling soon. it is all just a hobby right now and hopefully it'll pay off in some way eventually.
