Quick and delicious vegan queso: Blend a cup of soaked cashews, 1/4 cup nooch, 1/4 cup water, a couple tsps of lemon juice, juice from a rotel can Fry up vegan chorizo After chorizo is cooked, turn stove to low, dump the blended queso and the rotel can into the pan. Cook until warm and serve with chippies. how long do you soak the cashews?

Cashews are pretty soft and absorb the water quickly so even without a high powered blender, I don't think it would take a much longer.

It's amazing how much meow be COOKIN cookin. I stir impossible meat and taco seasoning and chop cilantro and onions for tacos and feel like I've put in work lol.

spent all day excited to eat my leftover curry but this time i warmed up some naan to dunk in it and maaaaaaaaaaan i wish i had taken notes of what i did instead of cooking by vibes because this is incredible. i love slop.

I stir impossible meat and taco seasoning and chop cilantro and onions for tacos and feel like I've put in work lol. i purposely live in an ingredients house. i usually have no snacks and my only option for lazy food is ramen, but even then i have to do it the hard way because i don't have a microwave. it SUCKS. but i also love leaning against the kitchen counter with a drink in one hand and my phone on board in another while i'm cooking so it actually kinda rocks

Has anyone here ever made rejuvelac out of quinoa? Wondering if anyone has any tips, or any idea of the flavor profile differences between the tri color and white quinoa. Hoping to use rejuvelac as an easy to make/cheap replacement for vegan yogurt cultures like LyroPro when making aged vegan cheeses.

Hoping to use rejuvelac as an easy to make/cheap replacement for vegan yogurt cultures like LyroPro when making aged vegan cheeses. I use this recipe all the time to make vegan cheeses. Iβve used both white and red quinoa; I havenβt noticed a difference in flavor. That might not be the case with yogurt, since the flavor is more subtle than cheese. The recipeβs simple enough that you could do one of each and compare. From Miyokoβs Homemade Vegan Pantry: Ingredients: Β½ cup quinoa or wheat berries 1. Put the quinoa or wheat berries into a 1-quart wide-mouth jar. (Make sure that the grains arenβt already presprouted!). Cover them with water and let sit for 8 to 12 hours, then drain. 2. Secure the top with cheesecloth and rinse and drain the grains twice a day until you see sproutsβquinoa sprouts in less than 24 hours, whereas wheat berries generally take about 2 days. 3. Now fill the jar with filtered water, cover with a lid, and leave at room temperature (out of direct sunlight) for 2 to 3 days, until the water is cloudy and bubbly. 4. Strain out the seeds and refrigerate the liquid, which is now lactic acid-rich rejuvelac. 5. You can turn the strained sprouts into another batch of rejuvelac by filling the jar with water and letting it sit for another couple of days. The rejuvelac keeps in the refrigerator for 3 to 4 weeks. Makes about 4 cups.

The yogurt cultures give a nice tang that works well for Brie , interested to see how the rejuvelac compares.

I put some protein powder in my oatmeal every morning and eat a ton of peanuts/ peanut butter throughout the day

The names corny as hell, but I drink a Huel protein/meal replacement shake every day for breakfast. Itβs relatively cheap and has 40g of protein. For dinner I rotate between seitan, tempeh, and soy curls ( www.butlerfoods.com/products.html ).

Thanks! Iβve already changed my breakfast from just oats and fruits to overnight oats with protein powder and skyr and that helps a lot. So far Iβm only drinking shakes after working out but maybe Iβll add them to my rest days as well. Edamame and nooch I hadnβt thought about before, sounds perfect. As far as peanuts go I almost always overshoot my fat target and am afraid to add more nuts to my diet but starting to think I should ignore that as long as I hit my overall calory and protein goal.

I eat a ton of lentil curry- some observations and things I do with it:
1) Sometimes I'll just blend it down into a sauce (make sure to cook the lentils for a while so they actually blend up well) in large batches, freeze it and then use that as a base for further curries
2) For curries cooked the next day, I sometimes like to fry the sauce. Get some oil or w/e real hot and add a few spoons of the sauce right into the oil and let it fry for a bit. Adds some nice flavour.
3) Similar to the above, right when a curry is basically done and ready to serve, sometimes I will heat up some oil and quickly fry some spices in it (chili, cumin, cardamom etc) and when the spices are very fragrant I'll just dump the flavoured oil right on top of the curry. Adds a ton of extra flavour (even if you've bloomed spices during the initial cooking) and some extra fat if you've got a real lean curry there. Also can be a good way to separate spicy/mild if someone doesn't like heat.
