Drove 30 min to pick up my shit, and the brewery that the guy's selling the asada from told me it's actually not ready until tomorrow! Soooo, I made some vegan chipotle sauce, and I'm letting it settle in the fridge to make tacos norteños tomorrow. I'll post pics if I can plate it nicely. I suck at presentation

How did you do the gravy? ordered a box of this stuff. came with like 12 packs in it i think. all you do is add hot water and stir til it bubbles and thickens.

Best & easiest vegan gravy for me is to just chop up a quarter of a white onion, simmer it in a pan coated with oil. Add about a tablespoon or more of flour. Then add a cup of water and a not-beef bouillon cube from Edward & Sons. As soon as it comes to a boil, reduce the heat and stir until thick.

LOVE BTB! Veg stock is great, but their No-Chicken has been a game changer for getting the right flavor profile for Mexican. Yeah, I find I like cooking with the bouillon replacers much better than vegetable stock. This too. being able to mix slightly lighter ratios of concentrate/water is really nice.

I made a really fantastic Chik'n & Dumplings today for afternoon football comfort lunch. I think I got too hyped on the Better than Bouillon cause it came out saltier than desired, but still very good.

These muchachos were on shark tank pitching their "chicken salt" and chicken patties. It's called jada spices. All vegan, so I was super intrigued. Bought this from their site and it was fuckin awesome. The patty is SUPER easy to make and actually kinda fun. It's this dry mix that looks like oatmeal. You just add a cup of water and a spoonful of oil, and mix it all together. You can form patties or nuggets or whatever shape you want and pan fry that shit. Obviously you gotta season that bitch, which is where that damn chicken salt comes in. Fuckin chicken salt, man. Shits good on everything.

I've been contemplating starting my Mexican food stand for a while and have my layout already as well my menu planned. I wanna just post up and hustle them in Pittsburgh, but I am also nervous about doing it without being well known also during a pandemic. Tips? Pointers?

Friends of mine started an all-vegan bakery called Violet Sweet Shoppe. She was very good, the best cake I've ever had. They crowdfunded to help with the opening costs. After a couple years, the owner of the property decided to sell so they had to move out. They couldn't afford to open another bakery with all of the upfront kitchen building costs, so they opened a vegan candy/chocolate store. It didn't do nearly as well as the bakery. They ended up getting a divorce for other reasons, but the candy shop closed and she moved to Florida I think. I miss the bakery Don't think I ever met the woman co-owner, but the other person was Metal Mike right? I think it started after I'd already left Seattle.

There’s a vegan bakery about ten miles east of me but they’re kind of vegan by accident I guess. The owner had a kid with some sort of allergy or something and saw the need for allergen free desert stuff. They’re making a killing charging like $25 for 4 vegan cupcakes or cakepops but they’re really just cutting out eggs, butter etc. in the name of being allergen free.

That being said my wife is vegan so one of the things I’ve got her in the past for Valentine’s Day was some treats from this place. I got the feeling going in there they could give two shits about animals. Any ideas for some sweet treats I could get for her even if I gotta order on line or whatever?
