Chili is an obvious one
Black beans (with the liquid from the can) with garlic, onions, cumin, cooked down to a nice consistency. Served over polenta with some slices of orange on top.
Chickpeas, garlic, onions, ginger, curry powder, coconut milk and broccoli/asparagus/carrots/whatever. Served over rice with avocado slices on top.

bumping for budget vegan meals that aren't lacking in protein, just had to recalculate my monthly budget in the wake of everything that has happened this week and i am shook. bonus points for some gluten free type options too because my gf is allergic to wheat. i know a friend of mine in undergrad was big on beans and rice with an expansive sauce library, so maybe some riffs on stuff like that? Zatarain's has gotten me through the hard times again and again throughout my life it's never the #1 thing I want, but it's also good 100% of the time. It's never wrong. It just is. Zatarain's abides.

Been making chickpea salad for sandwiches in huge batches - chickpeas mashed up, vmayo, celery, salt pepper garlic powder, and that's it. Fast, easy and makes the best sandwich or wrap. Throw tempeh slices on it for extra protein.
Also - peanut sauce! extra protein and goes so good on rice, noodles, tofu, anything! peanut butter, soy sauce, hot sauce, lime if you want, and maple syrup or agave!

My local supermarket just started stocking Morning Star. I’ve never seen that brand in Australia before so I was pretty pumped when I saw 4 or 5 items in the vegetarian/vegan freezer. Unfortunately, on closer inspection most of their shit includes whey and/or eggs. The only fully vegan thing they had was their nuggs, are they any good?

Kellogg owns Morningstar and most of their products aren't vegan, but supposedly they are starting to remove the eggs/dairy and in a couple years everything will be vegan. When Kellog bought Gardenburger, they started to rebrand those products as Morningstar. Their best vegan item was the Riblet, but I don't think they make it anymore. Their corndogs are vegan now though! That’s good to know. This place only had the nuggs plus mince and 3 different types of burgers. I actually had put them all in the cart thinking they were all vegan but luckily checked the ingredients list before I left.

the whole foods brand chicken nugs are the best ones ive tried. also i got some morning star beef crumbles and was surprised how bomb they were kinda mushy but perfect for burritos

I wanna eat alot of protein ya see Honestly I wouldn’t worry about it unless you’re eating processed soy products in every single meal. Whole soy foods like tofu, tempeh, edamame and some soy milk are complete proteins so they have other health benefits too. On the subject of protein, seitan (vital wheat gluten) has a huge amount (75g per 100g) - getting it to taste amazing is definitely more of a challenge, but there are loads of resources available online. Obviously there are other great sources of protein too like legumes, nuts, seeds, etc. It’s easy enough to find charts with all the nutritional info if you’re following macros. Good luck with eating more vegan/veggie food dude, hope you enjoy it!

they are technically "processed" but he probably meant all the fake meats and junk food stuff from the frozen aisle... pretty sure you have to eat soy by the truckload for it to be bad for you

Yeah, this is right on and my body currently reacts accordingly. Tofu, tempeh, edamame; all good. Anything made from "soy protein isolate", churns up my stomach and makes me feel like shit, so I try really hard to avoid that. So far the pea-protein based meats have treated me well so I stick to those now, but still a lot less often than just having beans and/or tofu.
