What part of town should we stay in for Copenhagen, Amsterdam and Paris? (the rest of that trip we are just winging it, and not sure where we will end up).

Copenhagen : Vesterbro, Nørrebro or the top of Amager (around Amager Station/Island Brygge). All withing walking distance of the center, and with plenty of restaurants, bars,... around.
Paris: 10/11th or 5th/6th arrondissement I would say, depending of what you're looking for. They're well located, plenty of things to do. 5th/6th are more fancy without being too crazy, and it's a nice place to walk around.

I'm glad those are the same recs I'd give for CPH as a tourist! Nørrebro would be my preference among those.
Amsterdam is super walkable, so most areas should be fine. I would avoid being close to the Red Light District--it's just loud and full of idiots. We stayed on a house boat a short walk northwest from Brouwerij t'IJ, which was pretty low key and a cool experience.

I am wanting to stay at the Nobis hotel in Copenhagen, but I can't tell if that is far or close to Norrebro in Copenhagen terms. A 15 min bike ride is probably too far?

I've walked to Norrebro from further away--you'll be fine. They also have Uber if you don't want to bike/walk. It would be a pretty quick ride depending on where you're going.

Thank you!!! I will for sure focus in that area.
** We wen't to Thailand last year, but the year prior we did a big Europe trip where we somewhat winged it, and wanted to be even more spontaneous on this trip, but in trying to rent the car we are running into massive one-way fees ($1,750 just for the dropoff fee).
I guess renting Germany > Germany last time, even though there were many countries in between saved us, because I don't remember dealing with this (we are trying to pickup in Copenhagen and return to Paris this time).
Eurail is just as expensive for the pass we would need, and I really don't want to fly.
Anybody done a one-way rental and somehow avoided the fee?

It's not that badly located, also because you got the 5C bus line just next to it, that runs all the way from the Aiport to the Central Station and then all the way up through Norrebro. That said, the immediate vicinity of the hotel is a bit boring, sure you're close enough to both the city center and the train station, but there's really nothing around, no small supermarket or coffee shop if needed be for example.

Good locations for both. For Amsterdam, just remember to buy any museum tickets well in advance to avoid the long lines. Also, check out the National Museum of Denmark--it's free!

Going to Beirut, Lebanon in late February. Who's got the details on food, drinks, things to do, things to avoid, whatever? We'll be spending around a week.

Better place to spend a week in: Toronto or Montréal? Do both! There's a cheap train that goes from Toronto to Montreal and vice versa. Highly recommend

Personally I'd go with Montreal. Montreal has more history, more culture, better food, and a kind of European vibe you wouldn't get anywhere else in Canada or the US. Whereas I find that Toronto's pretty bland and their transit is probably the worst I've experienced for a major city.
Plus, you can do plenty of day trips(like Ottawa, or hike the mountains), whereas Toronto is kinda just surrounded by boring towns.

We'll be spending around a week. this is my research which is not as extensive as I remembered Beirut 4-6 Days As this is a good base to explore the country, as you can visit all the sites below from Beirut. -Baalbek and the Bekaa Valley are 1-2 hours north of Beirut -Jeita Grotto - 20km north of Beirut -Byblos - 40km north of Beirut, on the way to Byblos is Jounieh, with a cable car to the statue of Harissa -Tripoli - second largest city - Old City, and Souqs - a day trip from Beirut
